Baked…Not Fried

Sweet Potatoes are in!  My husband and I go to a local restaurant where baked sweet potatoes with butter and brown sugar rein supreme!  On the healthier side though…we like these Baked Sweet Potato Fries just as much.  I have tried to make sweet potato fries using many different recipes until I finally created my own.  You really have to watch these closely in the oven as they tend to burn on the edges.  Serve these Baked Sweet Potato Fries with ketchup, honey mustard, ranch dressing or barbeque sauce.  My husband and I have tried all of those and can’t make up our minds which we like best.  You decide!

Baked Sweet Potato Fries
INGREDIENTS
2 large sweet potatoes, peeled
1/3 cup freshly squeezed orange juice
1/4 cup light brown sugar
1 tablespoon vegetable oil
kosher salt
freshly ground black pepper
1/4 teaspoon ground ginger
1/4 teaspoon cayenne pepper, or to taste

DIRECTIONS
Preheat oven to 450 degrees F.  Wash and peel two large sweet potatoes and cut into strips. 

In a small saucepan, combine the orange juice, brown sugar, oil, salt and pepper to taste, ginger and cayenne pepper.  Whisk while simmering on low heat until mixture becomes slightly thick.

Pour this mixture over the sweet potato strips and toss gently.

Put coated sweet potato strips on a non-stick pan lined with parchment paper.  Place in preheated oven and bake approximately 15 minutes.  Turn the fries over and bake another 5-10 minutes.  Again, watch carefully because these burn easily.  Remove from oven and enjoy!
