In honor of Chocolate Chip Day I prepared…
Chocolate Chip Chewy Bars
1 (lb) package light brown sugar
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 stick butter, softened
3 eggs beaten
1 tablespoon vanilla extract
1 cup sweetened, flaked coconut
2 cups pecan, chopped
2 cups semisweet chocolate chips, divided
2 tablespoon vegetable oil
1/2 cup chopped almonds
Preheat oven to 350 degree F. Lightly grease a 9×13 baking pan. In a large bowl, mix together all ingredients, reserving 1/2 cup chocolate chips, vegetable oil and chopped almonds for topping. Spread batter evenly in prepared pan and bake for 30-35 minutes. or until a toothpick inserted through the middle comes out clean. Cool bars completely before adding topping.
Topping: melt 1/2 cup chocolate chips. Blend vegetable oil with melted chocolate. Drizzle over bars. Sprinkle almonds on top of chocolate. When chocolate is set…cut into 1 inch squares.
