Happy Fall

Everyone loves pumpkin bread.  I know…that’s my opinion!  Do you love pumpkin bread?  I do!  Making pumpkin bread is one of those Fall traditions. Something about a warm loaf of pumpkin bread coming out of the oven, along with the smells it creates, states…Autumn has arrived.  My husband and two children moved to Florida one year after living in the Midwest for nearly 25 years.  What I missed most about the Midwest, besides my family, was the change of seasons – especially FALL.  Well, we are back in the Midwest…and I’m loving the fall months, especially the part that involves baking pumpkin bread.

Pumpkin Bread
(Printable Recipe)
3 1/2 cups sifted flour
2 tsp. soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3 cups sugar
1 cup vegetable oil
4 eggs, well  beaten
2/3 cup water
2 cups pumpkin

3/4 cup chopped walnuts (optional)

Sift together all dry ingredients…
…including sugar.
Add remaining ingredients and mix well.
Pour, evenly, into greased loaf pans.
Bake in 350-degree oven for 1 hour.
Cool on wire rack before slicing.
Great served with Cinnamon Butter.

Cinnamon Butter
1/4 cup unsalted butter, softened
1/2 cup honey
3/4 teaspoon cinnamon

Mix in bowl until light and fluffy.
