Crispy Fried Zucchini

My Grandmother Franklin taught me how to make this wonderful, summertime side…Fried Zucchini.  Its the one squash that I love and the vegetable I look most forward to when garden items become abundant!  I adore it fried, grilled and in baked in bread.  It’s also great sliced and placed on a BLT…I call it BLTZ.   This is a simple dish to make and kids love it, when they normally would turn their nose up to squash.  It is best served with ketchup on the side.   Here is how Grandmother Franklin made it way back when and here is how I make it today…

Start with a small to medium sized zucchini. If it is too will be the seeds.

Wash and dry zucchini and pat dry with a paper towel. Remove the outer peel and cut in half. Slice thin, lengthwise strips of zucchini.

Whisk one whole egg in a dish.


Add milk, salt and pepper to egg. Whisk until combined.

In another dish, combine flour and yellow corn meal.

Dip zucchini slices into egg/milk mixture to coat completely. Allow excess liquid to drip back into bowl. Then coat wet slice into the flour/cornmeal mixture, patting slice to allow coating to stick. Finish by frying zucchini slices in hot vegetable oil. Fry on each side until crispy. Drain on plate lined with paper towels.

Crispy Fried Zucchini

1 small or medium zucchini
1 egg
1 1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cup flour
1 1/2 cup yellow cornmeal
vegetable oil, for frying
salt, pepper, for taste
Wash and dry whole zucchini.  Cut zucchini in half and slice, lengthwise in thin slices.  Whisk egg in a medium bowl to blend.  Add milk, salt and pepper.  In a separate dish stir together flour and cornmeal.  Dip each zucchini slice in the egg/milk mixture, coating completing and allowing excess liquid to drip back into the bowl.  Transfer wet slice to the flour/cornmeal mixture, patting to coat completely.  Place zucchini slices on a plate until all pieces are prepared. 
In a large frying pan, pour vegetable oil in to reach approximately 2 inches deep and heat  until hot.  Working in batches , fry zucchini slices until golden brown on both sides, about 2 minutes each.  Using a slotted spatula, transfer the fried zucchini slices to a plate lined with paper towels.  
Arrange drained zucchini slices on platter and sprinkle with salt and pepper to taste.  Serve warm.
