My dear friend, Marla, gave me this recipe so many years ago. I knew Marla before I started teaching, but I really got to know her when I began. Marla was my teacher-mentor during my first year of teaching eighteen years ago and let me tell you…this beautiful lady got me through a lot! One way she helped me survive my first year of teaching was by feeding me! Yes, I gained weight my first year of teaching, but what new teacher doesn’t. Many times Marla shared her homemade treats with me during our lunch period, but what I will remember the most is going to Marla’s home and eating some wonderful food during her holiday get-together’s. Did I mention that Marla is also a wonderful hostess? Wherever it is that I share in my dear friend’s wonderful food, I am sure to walk away with a new recipe. This cucumber is amazing! It has become my husband’s very favorite dip. He loves to open a new bag of Wavy Lays and finish the whole bowl of this dip (and Lays) in one setting. I prefer to serve this with fresh cucumber slices. How will you serve-up this dip?

Serve with cucumber slices…. or chips….or crackers. Spread on pumpernickel slices for mini-sandwiches. What’s your pleasure?
- 8 ounces cream cheese, softened
- 1 teaspoon lemon juice
- 1 teaspoon onion, grated
- ½ large cucumber, grated with peeling
- dash Worcestershire
- 2 tablespoons mayonnaise, heaping
- dash of pepper
- 1 garlic clove
- Mix cream cheese, lemon juice, grated onion and grated cucumber.
- Add Worcestershire, mayonnaise and pepper.
- Stir until well mixed.
- Rub serving bowl with garlic clove until well coated.
- Spoon in dip and chill until serving.

I definitely have to try this one!
