Blackberry Cobbler Roll

I have prepared many different versions of Blackberry Cobbler over the years, but this Blackberry Cobbler Roll will go down in history as my very favorite!  On this particular day, my daughter and I were spending some time in the kitchen together.  I had the pleasure of teaching her how to make this family recipe!  I recently put several bags of blackberries in the freezer so our family can have cobblers all winter long.  I have been known to go ahead and prepare the cobbler, wrap it unbaked and freeze for easy preparation.  Did I mention…you cannot serve this cobbler with out warming it (if not serving it fresh and warm from the oven) and placing a few scoops of ice cream on top?

First, make cobbler dough by cutting butter into small pieces (Make sure your butter is cold from the refrigerator!).  With a pastry blender, cut butter into flour, baking soda and salt until mixture is small particles…

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Add milk and stir with a fork until mixture comes off the side of the bowl and begins to form a ball…

 

 

 

 

 

 

 

 

 

 

Turn onto floured board or pastry mat and roll out in a circular shape – approximately 1/4 thick…

 

 

 

 

 

 

 

 

 

 

Spread blackberries over dough, in a single layer…

 

 

 

 

 

 

 

 

 

 

Sprinkle tops of berries with cinnamon…

 

 

 

 

 

 

 

 

 

 

Roll dough, like a jelly roll…making sure you don’t lose any blackberries…

 

 

 

 

 

 

 

 

 

 

Cut into thick slices, approximately one-inch.

Place in a baking dish (I prefer glass!) over melted butter, which has cooled…

 

 

 

 

 

 

 

 

 

 

Pour a simple syrup of water and sugar over rolls…

 

 

 

 

 

 

 

 

 

 

Bake and sprinkle sugar over the top of cobbler after removing it from oven…

 

 

 

 

 

 

 

 

 

 

Blackberry Cobbler Roll

Ingredients
  • 1½ cups flour
  • 2¼ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, half cold
  • ⅓ cup milk
  • 2 cups whole blackberries
  • ¾ teaspoon cinnamon
  • 1 cup sugar, plus 2 tablespoons
  • 1 cup water
Instructions
  1. Prepare a 10 inch pan by melting ½ cup butter and setting aside to cool. To make simple syrup, heat 1 cup sugar and 1 cup water until sugar melts. Let simple syrup cool. Reserve 2 tablespoons sugar for the top of baked cobbler roll.
  2. Make cobbler dough by cutting cold butter into flour, baking powder and salt mixture until particles are like fine crumbs. Add milk and stir with a fork until dough leaves sides of bowl and begins to form a ball. Turn out on floured board; roll out to circular shape about ¼-inch thick.
  3. Spread berries over dough; sprinkle with cinnamon and roll up like jelly roll. Cut into 1 inch thick slices. Carefully place in pan over melted butter. Pour sugar syrup carefully around slices. Bake at 350 degrees for 1 hour 15 minutes. Before removing from oven sprinkle 2 tbsp. sugar over crust.
