This Lemon Bundt Cake was mother’s stand-by recipe for a friend in need, a family who lost a loved one or because Dad was hungry for it. She made it often and made it well and she passed it down to her daughters. I treasure this recipe card I have in my collection…it was typed by mom. She never thought her handwriting was very good and as her health failed, so did her ability to write things down, so she often typed things. I’m so glad mom shared this cake with me. I make it often for a friend in need, a family who lost a loved one or because my husband is hungry for it. My hope is that my daughter will do the same someday.
Four main ingredients, plus water, is all it takes to make this delicious cake.
Combine all ingredients in a bowl and mix on medium for two minutes.
Pour into a bundt pan which has been greased and dusted with flour.
- 1 lemon cake mix
- 1 package lemon instant pudding
- 4 eggs
- ½ cup oil
- 1 cup water
- Mix all ingredients and mix on medium speed for 2 minutes. Pour mixture in a bundt pan which has been greased and dusted with flour. Bake in a 350 degree oven for 45-55 minutes or until a cake tester inserted near the center comes out clean. Let cake cool in pan for 5 minutes and then invert on a plate. When cool, dust with powdered sugar, slice and serve.
