I believe we all have that one stand by cookie or dessert in which we always have the ingredients on hand and prepare often. That cookie for me is this Peanut Butter No Bake Cookie. I have had this recipe for years…I’m talking back to 4-H days in the late 60s- early 70s. It might be a recipe I received from one of the great cooks who invited me into her kitchen or a family member. While I don’t know for sure who shared it with me, I do know it’s easy and delicious. I have a very similar recipe that does not contain peanut butter, yet coconut. Try swapping the ingredients and see which cookie you like best. Just remember…the name of the cookie changes. Enjoy!
Mix sugar, cocoa, milk and butter in a medium saucepan.
Bring mixture to boil and continue boiling for one minute.
Remove mixture from stove top and add peanut butter.
Stir until peanut butter is melted and mixture is smooth.
Stir in vanilla and oats. Drop batter in heaping tablespoons onto waxed paper. Let set until firm and cookie can be picked up with falling apart. Devour one while it’s still warm…it’s worth it!
- 2 cups sugar
- 3 tablespoons cocoa
- ½ cup milk
- 1 stick butter
- ½ cup creamy peanut butter
- 1 teaspoon vanilla
- 3 cups oats
- Mix sugar, cocoa, milk and butter in medium saucepan.
- Bring mixture to a boil and continue boiling for 1 minute.
- Remove mixture from heat and stir in peanut butter until melted.
- Add vanilla and oats.
- Stir until mixed well.
- Drop batter by heaping tablespoon onto waxed paper.
- Let cookies stand until they hold together.
