I have made it no secret that I’m addicted to Food Network, but I’m here to confess I’ve found a new cooking show that I now call a favorite. The Chew is on during the day when I’m at school helping students find books that are “just right” for them and keeping the library open, but my DVR has made life a little more enjoyable by recording this fun and addictive show while I’m away. I hadn’t prepared any of the many recipes I’ve pinned or printed from The Chew, so I thought it was time to do so and here it is! These “Spaghetti and Meatballs” are pretty darn good…and healthier than the ones I usually make. I also discovered and used a new ingredient never purchased before… sugar plum tomatoes. While a little on the expensive side…I’m here to say they were worth every penny.
This is where I started…food processor meet some celery, carrots, onion and garlic. I add these to the sauce a little later.
Then ground turkey and a host of other ingredients are mixed together.
Which resulted in these little beauties!
A pause and a change in the recipe comes next. I just couldn’t bring myself to put the uncooked meatballs in the sauce so I did what I know how to do. I added some garlic EVOO to the pan and cooked them on the stove top. This choice made the mix a little less healthy…call me spoiled.
Now comes their debut! These sugar plum tomatoes are not only cute, juicy and red, but delicious too. I couldn’t resist…YUM!
One more look…I just had to!
With a few other ingredients, including those vegetables I started with, this is what the tomatoes become…the sauce.
When the meatballs are added…looks pretty good!
I must not forget the spaghetti…SQUASH. With a little olive oil and salt – DIVINE!
