Mexican food is my favorite! On Super Bowl Sunday, my husband made classic chicken quesadillas and they were not complete until we topped them with this pico de gallo. I literally live on this side in the summer months when tomatoes are plentiful, and I typically order a bowl of it when we go to our favorite Mexican restaurant in our hometown. I prefer dipping my tortilla chips in this bowl rather than the salsa one.
- 2 diced Roma tomatoes
- 1 diced sweet, white onion
- ¾ cup chopped cilantro
- juice of half a lime
- 1 diced jalapeno, with seeds removed
- dash of kosher salt
- pinch of freshly ground pepper
- Mix all ingredients. Serve fresh.
