Cucumbers and Onions | My Kitchen AddictionsA simple pleasure of summer is devouring these cucumbers and onions at every other meal at our table.  This side dish is a staple when fresh cucumbers and onions are plentiful.  Whether I purchase these produce items at the Amish, at our local farmer’s market or at one of my favorite little stores…Route A Country Store, they are equally good! I normally have fresh basil and parsley from my garden, which makes it even better, if that’s possible!  I’m delighted that this recipe comes from my mom!  Oh, and did I mention?  This recipe keeps for days in the refrigerator and tastes even better on the second and third days, if it isn’t all gone. Cucumbers and Onions | My Kitchen AddictionsThese beautiful babes were a find at the Amish the other day!  3 for $1.00.  They don’t get much better than this! Cucumbers and Onions | My Kitchen AddictionsPeel and slice each cucumber.  I usually use 6 small or 3 large cucumbers.  I also take a fork and scrape the sides to add a decorative edge.Cucumbers and Onions | My Kitchen AddictionsPrepare the dressing and pour over cucumbers and onions.  Chill before serving.

Cucumbers and Onions
Recipe type: side dish
  • 3 large or 6 small cucumbers, peeled and thinly sliced
  • 1 large onion
  • 1 cup white vinegar
  • ¾ cup water
  • ¾ cup sugar
  • 1 teaspoon salt
  • dash of cayenne pepper
  • dash of ground black pepper
  • dash dried parsley flakes
  • dash dried leaf basil
  1. Peel and slice cucumbers and onions, alternating and layering them in a dish.
  2. In a small saucepan, combine all other ingredients and heat on low heat until sugar dissolves..
  3. While liquid is warm, pour over cucumbers and onions.
  4. Cool thoroughly before serving.
  5. Store in refrigerator.
