This potato soup has been my go-to recipe for many years.  What things make it the best and favorite soup in our house?

  • I normally have what I need to make this soup on hand!
  • It’s been my husband’s request when he is not feeling well!
  • Easy is it’s middle name!
  • Vegetables are plentiful!
  • The taste is amazing!

Stir until added butter is melted.
Potato Soup| My Kitchen AddictionsContinue to simmer, at a low heat, until thickened.  Serve warm with chopped bacon and green onion.  Croutons are great on top, as well as shredded cheese.

Best Potato Soup
  • 3 cups chopped potatoes
  • 1 cup water
  • ½ cup celery, chopped
  • ½ cup carrot, chopped
  • ¼ cup onion, chopped
  • 1 chicken bouillon cube
  • ½ teaspoon salt
  • Dash of pepper
  • 2 tablespoons flour
  • ½ cup water, a little less or little more
  • 1½ cups milk
  • ½ lb. Velveeta cheese, cubed
  • 1 teaspoon parsley
  • 2 tablespoons butter, unsalted
  • Toppings for soup, such as chopped bacon and green onions
  1. In a large saucepan, cover potatoes with water.
  2. Bring to a boil. Then lower heat.
  3. Add remaining vegetables, chicken bouillon cube, salt and pepper. Cover and simmer approximately 15-20 minutes or until all veggies are tender.
  4. Make a paste by whisking flour and water together. Use more or less water, if necessary.
  5. Stir paste into hot mixture, stirring until incorporated.
  6. Gradually add milk. Mix well.
  7. Add cheese and parsley. Stir soup until cheese is melted.
  8. Add butter and stir into soup until melted.
  9. Serve soup warm, topped with bacon and green onion or other topping of choice.
